    A word on charcoal

    We recommend lump charcoal over briquettes. It comes up to temperature faster, burns hotter, and answers the air vents far more precisely. The price is stamina: one load lasts 1 to 2.5 hours against 3 to 5 for briquettes. So on a long party, plan a second load — having spare charcoal in the house is cheaper than a gap in the middle of the evening.

    What we assume

    These are guide figures, not promises. We count 400 g of grillables per man, 300 g per woman and 150 g per child — the German range. With plenty of sides we take off a quarter; for an all-day party we add a fifth. Lump charcoal: about 1.5 kg per hour of grilling.
